Join us for an exclusive, hands-on charcuterie experience at Bray Cured, where traditional artisan techniques meet modern innovation to create exceptional British cured meats. With a strong commitment to sourcing only the finest heritage breeds and working with high-welfare British livestock, Bray Cured produces some of the most flavorsome and tender charcuterie in the UK.

This intimate event is limited to just eight guests, offering a unique opportunity to go behind the scenes at Bray Cured HQ, learn from expert butchers and charcutiers, and craft your own creations to take home. Whether you’re a food enthusiast or looking to develop your butchery and curing skills, this immersive experience will leave you with a deeper understanding of charcuterie and the confidence to recreate it at home.

Itinerary – A Full Day of Charcuterie & Butchery

  • 10:00 AM – Welcome to Bray Cured
    • Bellinis, coffee, and arrival canapés
    • Tour of Bray Cured HQ and introduction to charcuterie
  • 10:30 AM – Hands-On Charcuterie & Butchery (Morning Session)
    Guests split into two groups for a hands-on learning experience:

    • Venison Butchery & Charcuterie
      • Work with a Master Butcher to butcher a whole wild venison
      • Learn knife skills, butchery techniques, and preparing prime cuts
      • Tie, marinate, or dry rub venison for frying or roasting
      • Prepare and stuff your own venison sausages
      • Take home your expertly butchered venison and sausages
    • Chorizo Creation
      • Work with a Master Charcutier to learn curing techniques
      • Prepare chorizo filling and seasoning
      • Stuff and case your own salami, choosing your preferred style
      • Your charcuterie will be aged at Bray Cured and posted to you when ready
  • 12:30 PM – Lunch & Wine Pairing
    • Enjoy a delectable meal featuring locally sourced produce
    • Paired with a selection of local wines
  • 1:30 PM – Afternoon Session (Groups Switch Over)
    • Each group completes their second charcuterie session
  • 4:30 PM – Farewell Toast & Cocktails
    • Celebrate the day with cocktails and a final toast
