The clean clear taste of heather honey, combined with warm earthy cardamom is a match made in heaven.  Cardamom is traditionally used for its qualities in aiding digestion and to freshen breath.  Scoop the parfait up with the crunchy biscotti, and you have the perfect end to a meal.  


5 Egg yolks

100g Caster sugar

3 Tablespoons heather honey

1 Teaspoon cardamom seeds, pounded

500mls Crème fraiche

Beat the egg yolks, sugar, and honey together in a large bowl until pale and thick.  Fold in the cardamom and crème fraiche, just enough to combine the ingredients without losing the air out of the mixture.  Then transfer into a suitable container and freeze for at least 12 hours, or until needed.
